With summer season upon us, it also means it’s time for sundresses, shorts and bathing suits. I realized that I needed to rein it in a bit eating-wise, and kicked of another round on Weight Watchers in June (perhaps publicly sharing this will also keep me accountable? 😉  This isn’t sponsored or anything, but Weight Watchers is a system I go back to when I need a re-set on my eating habits. One of my favorite weeknight meals when trying to eat healthy is a BLT salad. Unfortunately, my favorite blueberry coffeecake is not on the approved list!
This salad comes together in about 15-minutes if you already have eggs boiled. Perfect for those nights when I get home late from the gym.
BLT Salad Ingredients:
*Note that WW points are based on the Smart Points (SP)
- 4 cups spinach (O WW SP)
- 4 slides turkey bacon, cooked crisp (I microwave mine) (4 WW SP)
- 2 hard-boiled eggs (4 WW SP)
- 1 tomato (0 WW SP)
- 1/4 of an avocado (optional and does up the WW points) Â (3 WW SP)
Dressing:
(adapted from this Cooking Light recipe – which is also really good!)
- 1 T Olive Oil (4 WW SP)
- 2Â T white wine vinegar (0 pts)
- 1 t Dijon mustard (0 pts)
- 1 T chopped fresh chives (0 pts)
- A little bit of water to thin the dressing to your liking
Instructions:
- Divide spinach evening between two plates
- Chop tomato and divide
- Crumble bacon and divide
- Slice each hard-boiled egg and place one on each plate
- Add a few slices of avocado, if desired
- Whisk dressing in separate bowl, and pour over salads
- Enjoy!

- 6 pts/serving without the avocado or 8-9 pts with avocado
