First, apologies for the lack of posting lately. After the One Room Challenge, we headed out on vacation for a few days and I was wrapping up as much as I could at the office before we left. Lots to come on our stay in Charleston! Before I start sharing some travel-related posts, I wanted to wrap-up our Mother’s Day celebration with this super easy appetizer. If you love blue cheese (which I do), then this one is for you.
Ingredients:
- Crostini or bagel chips – the grocery store near my house didn’t have any crostini, so I settled for bagel chips, but if you can find crostini bread, use that instead
- Blue cheese crumbles – I used the Whole Foods 365 brand. I do find it’s best not to use a reduced fat version of these because you need the cheese to clump together
- Honey – if you have fresh, local honey, I’m sure this is even better, but I was limited on time, so I went with the Publix brand
To assemble, use a pretty tray and layout the crostini so they are flat. Add a spoonful or so of blue cheese to each one, making sure it’s clumping together and staying on top of the bread. Drizzle some honey on top and you are good to go!
This is especially and great appetizer if you’re hosting because it only takes a minute to pull together. I quickly made these right as the moms were arriving and everyone nibbled on these (and Bloody Mary’s) until brunch was ready.
